Ice Cream Cake


Today we celebrated Rowdy Jr's 7th birthday.  He requested ice cream cake.  Chocolate cake with cookies and cream ice cream to be exact.

Ice Cream Cake
  • 1 cake mix
  • 1 can frosting
  • 1 tub ice cream
Set ice cream out on the counter for a few minutes.  Get one of your cake pans ready for ice cream.  Line the cake pan with Saran Wrap. Scoop in softened ice cream to the top.  Let set on the counter a few more minutes and smooth out when soft enough.  Place in freezer, in pan, until hardened.  Once hardened, lift out of pan and place back in freezer.  Prepare cake as directed in two pans, the same size as the one you used for your ice cream layer.  Cool cake completely. To assemble: place first cake on cake plate and slice off the top to make it nice and flat. Unwrap ice cream layer and place on top of cake. Top with the second cake layer. Place back in freezer for 30 minutes. (The ice cream softens quickly!) Remove from freezer and frost with your favorite frosting. Place back in freezer until ready to serve.

  1. This looks really good. I have never used real frosting on an ice cream cake, but this looks like a fab idea. Hope you had a great party.
